Lathcoats vintage sparkling cider

We are very excited that the first beautiful bottles of Lathcoats vintage sparkling cider are now in the farm shop, just in time for Christmas. We are thrilled with the look, the taste and the fine, velvety bubbly feel of our cider, and think it's a brilliant, local alternative to Champagne or Prosecco.
It was made by Newhall Vineyards near Maldon, using the method champenoise, from apples harvested from our orchards in October 2015. Dabinett, a cider apple, was carefully blended with dessert apples Temptation, Pinova and Winter Gem and after the first fermentation of the pure juice, it was left for six months to mature. A special champagne yeast was then added and the cider transferred to full strength champagne bottles for the second fermentation lasting another 6 months, during which the gorgeous fine bubbles formed.
